Red Wine Sour

Ingredients

  • 2 oz. Dillon’s Rye Whisky
  • 1 oz. fresh lemon juice
  • 1 oz. Dillon’s Classic Simple Syrup (or make your own at home 1:1)
  • 2 dashes Dillon’s Aromatic Bitters
  • Handful of ice, for serving
  • 1 oz. VQA Ontario red wine

Directions

  1. Add the Rye Whisky, lemon juice, syrup and bitters to a cocktail shaker. Add the ice and shake for 10 to 15 seconds.
  2. Strain the cocktail into a rocks glass filled with fresh ice.
  3. Hold a spoon just above the surface of the cocktail with the back facing up. Gently pour the wine over the spoon so that it floats on top of the cocktail.

Rose Gin French 75

Ingredients

  • 1 ½ oz. Dillon’s Rose Gin
  • ¼ oz. fresh lemon juice
  • 2 dashes Dillon’s Pear Bitters
  • Handful of ice cubes
  • 3 oz. dry VQA Ontario sparkling wine
  • Lemon twist, for garnish

Directions

  1. Add the Rose Gin, lemon juice and bitters to a cocktail shaker. Add the ice and shake for 10 to 15 seconds.
  2. Strain your cocktail into a flute glass or coupe glass and top with the sparkling wine.
  3. Garnish with a lemon twist.

Blood Orange Sparkling Mule

Ingredients

  • 1 oz. Dillon’s Vodka
  • 1 oz. fresh blood orange juice
  • 1 oz. fresh lime juice
  • 2 dashes Dillon’s Orange Bitters
  • Handful of ice cubes, more for serving
  • 2 ounces Ginger Beer *We love to use local, Canalside Soda here!
  • 1 oz. dry VQA Ontario sparkling wine
  • Fresh mint for blood orange wheel, for garnish

Directions

  1. Add the vodka, blood orange juice, lime juice and bitters to a cocktail shaker. Add ice and shake for 10 to 15 seconds.
  2. Strain the cocktail into a copper mug filled with ice. Add the ginger beer and top with sparkling wine.
  3. Garnish with mint and blood orange wheel.
